RED LENTIL SOUP

YOU'LL NEED:
2 CUPS OF DRIED RED LENTILS
LITER OF STOCK (CHICKEN OR VEGETABLE), perhaps a bit more
1 OR 2 ONIONS, diced
FEW CLOVES OF GARLIC
1 TABLESPOON OF TOMATO PASTE
1 TABLESPOON OF CUMIN
1 TABLESPOON OF CHILI POWDER (or less)
1 TABLESPOON OF DRIED DILL
OLIVE OIL

OPTIONAL: GREEK YOGHURT, LEMON JUICE

Fry the diced onion and garlic for a few minutes in olive oil; add cumin, chili powder, and tomato paste and stir for a bit. Add the red lentils, stock, and dried dill and cook until the lentils are done (30 mins), blend if you like your soups smooth. Add salt and pepper to taste; eat with a dollop of greek yoghurt and lemon juice. Try not to despair.
